Maple-glazed ham

Ingredients

  • 2 lb. smoked ham shoulder
  • 6 to 12 whole cloves
  • 2 Tbsp. mild mustard
  • 2 tsp. corn starch
  • 1/2 cup pure maple syrup or organic syrup
  • 1/2 cup water

Steps

PRELIMINARY STEPS:

Place ham in a saucepan and add enough water to cover the ham to one and a half times its height. Bring to a boil and simmer for about one hour, or until the ham is tender.

COOKING:

Take the ham out of the water and place it in a roasting pan. Spread mustard all over top of ham, insert cloves, then add maple syrup or organic syrup and water. Bring to a boil and bake covered for 45 minutes in a 350°F oven, basting 3 or 4 times.

FINAL PREPARATION:

Remove the ham and keep warm. Add the cornstarch to the juices to thicken. Correct seasoning and strain sauce through a fine sieve. Cut the ham into slices and cover with sauce.
